Recently I have decided to go back to school and gain my high school equivalency diploma. I found that I literally have to relearn mathematics, some of the stuff I was starting to learn in 5th grade is now being taught in like 2nd and 3rd grade. So at the weekends I am studying and relearning math to help me to eventually pass my hiset test. I am also taking classes at my local community college for the hiset test and the teachers I personally think are fantastic.
I have been looking into the Cheyenne community college as well as the University of Wyoming as both of these are the closest that I know of that offer courses in agriculture, equine, etc. In order to get into these courses I need a high school diploma or equivalent hence why I am going back to school to get my equivalency diploma.
On top of going back to school, my father has started radiation for cancer and my son has been given another day at his special daycare & preschool. So Mon thru Friday is full of taking my son to school and going to school myself while my father has his treatment. Trying to do the weekly shop can be a pain specially with a special needs child that hates shopping and having to rush to get back home.
Even with things being hectic I have started some seeds indoors and the starts that are doing the best are the summer squashes and eggplants. I did start strawberry seeds and I do have a few growing, I am hoping that out of 50 of the seeds I started I’ll get at least 10 plants. I don’t think I will be doing as big of a garden as I was first hoping to have.
But I am happy to say that I am making a lot more from scratch, including my own bread making around 4 loaves of bread a week give or take. I do want to say one thing about making bread and that is weigh your ingredients, I have tried using recipes using the basic use x cups of flour, water etc and they don’t come out that great. I personally weigh my ingredients in grams, ml and teaspoons/tablespoons. I get great loaves every time by doing it that way.
I have also tried a few new recipes, one of which was a cheesy meat and potato one pot dish that was pretty good we just preferred the potatoes. So I made that dish adjusting for just potatoes and it came out better then the original. I now just need to try using the good ol russet potato instead of baby potatoes in said recipe as I don’t feel like shelling out $3+ for a 1.5lb bag of baby potatoes. Once I figure out the best proportions for the recipe I’ll post it up.
Because of the above my posting will unfortunately will still be erratic going forward for a little longer. Until I can figure out the best way to juggle everything and do my blog posting. Until my next post have a great day, week and month!
